Easy Hollandaise Sauce

3 egg yolks
1/2 cup butter, melted
1/2 tbsp lemon juice
1/8 tsp sea salt
1/8 tsp cayenne pepper


1. Whisk egg yolk, lemon juice, sea salt, and cayenne pepper in a microwave safe bowl.
2. While whisking, add butter to egg mixture in a steady stream.
3. Place in microwave, and warm in 15 second bursts, whisking after each time, until thickened and warmed through. Should take about 1 minute in total, depending on microwave. Mixture may separate. Use an electric hand mixer whisk to get a smooth and creamy texture.
4. Double recipe if you like extra sauce. This one makes enough for about 4 Benny’s.
